做法:春笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。 -
